The Oregon manual explains that sanitation requirements prohibit baffles in some food-product tanks because the internal surfaces would be difficult to clean. These unbaffled tanks are called smooth-bore tanks. With nothing inside to slow the liquid, they experience strong forward-and-back surge and must be driven cautiously.
